Meal 5: Potato & Carrot Omelette

COST: 65p (So don’t tell me that eating healthy food is expensive!)

INGREDIENTS
  • Potatoes 400g: 300kcal (350ml) Potatoes 400g: 300kcal (350ml) Asda Grower’s Selection British White Potatoes 2.5kg for £1.19
  • Carrots 200g: 80kcal (180ml) Carrots 200g: 80kcal (180ml) Asda Sweet & Crunchy British Carrots 2kg for 45p
  • 1 whole egg & 5 egg whites: 135kcal (165ml) Asda SP 15 Eggs from Caged Hens 15 for £1
INSTRUCTIONS
  1. Dice potatoes and carrots and place in a large plastic container
  2. Sprinkle on Turmeric & Cayenne Pepper to make the potatoes look browned like chips and add salt to taste
  3. Fix on the lid and shake well to distribute the Turmeric, Pepper & Salt over all surfaces evenly
  4. Heat in the microwave at 800W for 13 minutes
  5. Add the eggs, fix on the lid and shake violently to make the omelette
  6. Heat in microwave at 800W for 2 minutes

Serve the omelette on a large plate – don’t worry if it ends up like scrambled eggs – it still tastes the same and has the same effect – ie fills you up without providing you with too many calories! However, if you want it to look like the picture above on your plate simply turn the plastic container upside down before you follow instruction 6 above – then you can lift the omelette in one piece off the lid with a flat spatula!

NOTES

The pictures shows the meal on a 10 inch plate – enough for two ladies but only just enough for me!

If you would prefer to have 4 whole eggs instead of 1 whole egg with 5 egg whites:

4 eggs: 240kcal (240ml) Asda SP 15 Eggs from Caged Hens 15 for £1

CALORIE DENSITY: 20% = 620kcal/(770ml x 4)  and a lot less protein (egg white is protein, egg yolk is fat! 4 whole eggs contain 22g of protein – 1 egg plus 5 egg whites contain 33g of protein.
